The project focuses on creating a menu that caters to the dietary needs and preferences of older adults, ensuring balanced nutrition while considering common dietary restrictions such as low sodium, diabetic-friendly, celiac, and heart-healthy options. The goal is to design a menu that not only meets nutritional guidelines but also incorporates variety and flavor to improve meal satisfaction and overall well-being. Students will apply their knowledge of nutrition, gerontology, and culinary arts to develop a comprehensive menu plan. This project provides an opportunity to understand the unique challenges faced by older adults in residential care and to create practical solutions that can be implemented in real-world settings.
The project deliverables include a detailed menu plan for 4 weeks, complete with breakfast, lunch, dinner, and snack options. Each menu item should include nutritional information and accommodate common dietary restrictions. Additionally, a report explaining the rationale behind the menu choices and how they meet the nutritional needs of older adults will be required. The final presentation should include a visual representation of the menu and a brief explanation of the implementation process.

About the company
BetterLTC (led by Dr. Roslyn M. Compton) was established in 2013. The team is interprofessional, national and international, and intergenerational (age range 18-85 years; 15 older adults between 65-85 years of age). Through our collaborations and partnerships with for-profit and not-for-profit community organizations, BetterLTC acts through knowledge mobilization, education, advocacy, and policy to challenge ageist healthcare services to support older adults to grow older in their choice of place with the support and services needed. Current partners include Sherbrooke Community Centre, Saskatoon; Golden Health Care Management Inc., Saskatoon; 3 rural and 3 urban long-term care homes in Saskatchewan; Saskatoon Fire Services; College of Medicine and Dentistry, University of Alberta; College of Pharmacy and Nutrition, University of Saskatchewan; St. Thomas More College, Saskatoon; University of Regina, Regina; Memory Café, Crossmount Saskatoon; Saskatoon Council on Aging; Saskatchewan Long-term Care Network; Interprofessional Education, USask Health Science; the Saskatchewan Health Authority; Canadian Gerontological Nursing Association; Nav-CARE, British Columbia; and, the Canadian Red Cross.
